How to extract data from HTTP request payload?

Newbie in Splunk here.

How do I extract the value zzz@zzz.com(at the end of the below payload) in a new field named "user"?

I find it easiest to use the rex command.

... | rex "user\\\"\\\":\\\"\\\"(?<user>[^\\\"]+)"
