I would like to know if it is possible to modify the color of the curve in a dashboard using Line Chart ?

You can add the charting.fieldColors option to your chart's xml and specify hexadecimal colors (link below):

<option name="charting.fieldColors">
{"DATA1":hexadecimal_color,"DATA2":hexadecimal_color...}
</option>
