All the Splunk Enterprise versions are relased by Splunk are stable versions.

you can always go for latest version for  deploy if you going for fresh deployment. 

or if you are going for upgrade from older Splunk version , please refer to below URL for verson compatability

Hi

Basically any version should be ok. But personally I prefer to start using from x.y.z, where y > 0 and z > 2 as quite often there are some annoyances on those first major and minor versions. Also I try to avoid too recently released unless I know that there are some issues fixed which has hit my environment. Usually I try to found some comments from here or slack if anyone had found some issues from those.

my current preferred releases are 8.1.7.2 and 8.2.4.
