Is there a list somewhere that shows what perfmon objects are available to monitor for Windows, using Splunk?

Yeah, open perfmon.exe on the to-be-monitored machine and take a look at the add-a-value dialog. You'll get a huge list, anything in there can be monitored using Splunk.
