Yes - it can. Just configure your ESX servers to send logs over syslog to your Splunk server like this http://www.splunk.com/wiki/Community:VMwareESXSyslog and you should be able to monitor ESX. if you also want visibility into performance metrics etc, we have a Splunk app going into beta shortly that can pull metrics, logs and configurations. Thanks a lot for the link that you've sent. I am now able to send logs to my syslog server.

If your asking about monitoring your VMware Environment VM CPU/Datastores/Snapshots etc..., not the syslogs/vcenter logs then you can use: http://www.splunk.com/wiki/Apps:Splunk_for_VMWare (links at the bottom).

In our case I've modified the source of the Java application to return the proper names of the VM's.
