I have many windows systems I want to grab WMI data from. I have Splunk installed on Linux and want to do WMI polling. Is it possible to perform the WMI polling from a instance of Splunk running on Linux?

No it is not. Splunk uses Windows systems calls to collect via WMI.

However, if you have a Splunk Linux indexer, you can still collect WMI data by installing a Splunk Universal Forwarder or Splunk Light Forwarder or Splunk Forwarder on Windows, configuring it to collect WMI data, and forwarding back to the Splunk Linux indexer.
