My dashboard does not currently have the option to use Trellis. How do I go about enabling it?

you need to be on Splunk 6.6.x to use trellis. If you are on one of these versions, to enable trellis, when you are editing a dashboard in the UI, there is a little button on the upper right hand corner of the panel that looks like three vertical dots. if you click on that, it will let you enable trellis.
In the simple XML, you can add the option trellis.enabled with a value 1
