How do you syslog another syslog server in another protected network?

Has anyone had to deal with proper field extractions and host fields for a two-tiered syslog server environment? Our environment requires us to syslog another syslog server in another protected network.

This results in some odd syslog messages (2 timestamps) and incorrect host fields. Is there a recommended way of handling this type of setup to get the proper field and host extraction?

I would say the answer would lie in configuring those syslog servers correctly. Ensuring the first syslog source sends a proper timestamp and hostname and the intermediate syslog server just forwarding the raw message as received from the first (rather than adding an extra header / manipulating the original message).

If you don't have control over that, and need to make splunk work with the data you get, please share sample data so we can help figure out the best way to handle that.
