This might seem like a dorky question, but after searching answers and apps... I came up mostly empty.

Are there any dashboards for Apache logs? Or do people just build their own based on what they want to see?

People generally build their own dashboards as their requirement may be different. For a started your can use Sideview Web Analytic app to display apache logs. You can further customize it per your requirement.
