how do we ensure cluster replication is working? Is there some search we can run to test it?
The cluster master manager page has the status. install the SOS app on the cluster-master to have the details bucket per bucket.
If it's too easy to be true it's usually Splunk 😛

You could take a look at the master's cluster dashboard to verify all indexes are "green".
