Is it possible to use Quicklook (you know... the thing where you hit the spacebar in Finder) to look at the contents of .conf files without needing to open them in an editor like VI or TextEdit?

Well Jeff... I am glad you asked that question. There is a fantastic update for Quick Look on the Mac.
Download it here:
https://github.com/whomwah/qlstephen/releases
Then do this:
sudo cp -r /Users/*/Downloads/QLStephen.qlgenerator /Library/QuickLook/
Then you can do cool things like this:
