We currently use vCenter Operations Manager which already gathers all of this data... is there a way to get that data without having the virtual appliance gathering redundant data?

Hi john - You can choose what types of data are gathered by the virtual appliance, down to the particular log or metric type. Documentation has guidance on how to set the correct filters. Note that vCOPs doesnt retain all metrics data at 20s granularity for very long.
