I want to monitor the connection status of some network device, and I want to trigger an alert which the same source IP address access the device greater than 1000 per hour. How can I achieve this requirement?

The name of your ip address field might be different but the below example would work if the field is called ip:
... _index_earliest=-65m _index_latest=-5m | stats count by ip | where count>1000

I added index earliest/latest so the search has a 5 minute lag. This will allow for data that arrives late or with time skew to be identified too.

Schedule it to run every hour and alert when results are greater than 0
