Change the color of the graphics

Good morning

I am creating some graphs for some statistics, and I would like to change the colors with which the data is displayed, for example in a cheese I would like the critical alerts to be red, the orange ones and the green ones. But they appear to me in totally random color. Is there any way to specify the colors? Thank you.
