Will MINT work with an Android app that spins a native C++ app behind the scenes? Would MINT be able to provide crash logs & analytics of the C++ code, or is this not a good fit?

Mint is not a good fit for C++ code.  The C++ runtime is completely separate from the Java runtime where Mint functions.
