how can I change the fonts on an ubuntu server so they are not really ugly? Are there other packages I can install?

Since that question was asked, I overheard an internal viewpoint that we make too many assumptions about the available fonts on a system. There's an open task with the author of the pdfserver to make it work more nicely out of the box on ubuntu.
I'll ping the author on this question for more useful information (if any). If for some reason you really need it to work nicely now now now, you could drop it on a redhat or centos box, where our assumptions hold.
There's of course probably some easier workarounds of installing certain fonts, but I don't know them at this time.
