You can hide it, but as far as I know you can't replace it without a hackish workaround.

pdf.logo_path = <string>
* Define pdf logo by syntax <app>:<path-to-image>
* If set, PDF will be rendered with this logo instead of Splunk one.
* If not set, Splunk logo will be used by default
* Logo will be read from $SPLUNK_HOME/etc/apps/<app>/appserver/static/<path-to-image> if <app> is provided.
* Current app will be used if <app> is not provided.
MuS is correct. The only supported change is to hide the logo, which is documented in the Dashboards and Visualizations manual.
The previous Answers on this subject say the same:
Any other change you made would be unsupported and would not persist on upgrade.
