We've got a .csv file that we are trying to load into an existing index and an existing sourcetype by using the 'collect' command in the search app. Regardless of what we try, the data is always imported with the sourcetype of 'stash'.

Is it possible to import data into a sourcetype of our choosing via the collect command?

You can use the marker option to make a st field to use for source typing once collected. Like the following. It won't be a true source type but you can search on st. The source type stays 'stash' regardless. Trying to overload the source type name via marker won't work either.
| collect index=summary_abuse marker=st=Alert-To_XARF
